Old Tuscan monastery-style arched ceilings set the tone for Emeril Lagasse’s Delmonico steakhouse. A New England native renowned for his New Orleans eateries, Emeril combines the two influences in his imaginative creations. Devoted to using fresh, top-quality ingredients, he employs cottage-industry ranchers, farmers and fishermen to achieve his goals. Try the fresh corn cakes with chive cream and beluga caviar, or the shrimp remoulade parfait with seasonal field greens. The New Orleans gumbo of the day might be thick with pulled chicken and andouille sausage. Emeril loves his double-cut pork chop, served here with caramelized sweet potatoes, green mole and tamarind glace. An extensive wine-by-the-glass selection enhances the hearty repast.- March 2005
